Viennoiserie

Understanding Viennoiserie

Viennoiserie refers to breakfast pastries made in the Viennese style. Though these delightful pastries didn’t originate in France, their popularity soared after August Zang, an Austrian military official, opened his Boulangerie Viennoise in Paris. Zang’s innovative approach brought fresh ideas to the French pastry world, forever changing its landscape.

The Croissant’s Origin: A Tale of Vigilance

The delicious pastry we know today as the croissant has a fascinating origin story, dating back to Budapest in 1686. During a Turkish siege of the city, the invaders attempted to reach the city center by digging underground passages. Fortunately, bakers working through the night heard the sounds of their tunneling and raised the alarm.

Thanks to the bakers’ vigilance, the assault was repelled, and the city was saved. As a reward for their quick thinking, these bakers were granted the unique privilege of creating a special pastry. They shaped it in the form of a crescent, commemorating the emblem on the Ottoman flag and forever linking this iconic pastry to a moment of historical bravery.
